BASA WITH ROASTED VEGETABLES

We’ve got another cracking recipe for you, this one full of the majority of your 5 a day. Full of nutrients and if you keep the skin on some of the vegetables you’ll get a boost in fibre, vitamins and goodness. This tasty recipe is great for one, with lunch for another day, or for two to share as an evening meal.  We’d love to see if you give this a try, share it in the Health and Fitness Group or on social media @UOPsport.

INGREDIENTS

  • 1 Butternut squash
  • 3 Small Sweet potatoes
  • 2 Carrots
  • 3 Parsnips
  • 2 Onions
  • 1 Green pepper
  • 2 Big Basa fillets
  • Frylight olive oil

METHOD:


– Peel the butternut & parsnips (other veg as well if you prefer skin off)
– Chop all the vegetables and place in a baking tray
– Cover the veg with enough oil & season with whatever spices you fancy!
– Place both basa fillets in a tin foil parcel once seasoned with desired flavourings. I used paprika & pepper
– Place the veg in the oven for around 40 minutes stirring around 20 minutes
– Place the fish in the oven after 20 minutes and everything will be ready at the same time!
