CHICKEN AND VEGETABLE STIR FRY

Check out one of our go-to meals, with common ingredients that are often found in the fridge and freezer. Easy on the effort, big on the flavour, budget-friendly and with a cheeky bit of Nando’s for good measure. The quick nature of this meal makes it perfect for lunches in lockdown or healthy snacks in halls. This a great light low carb option for lunch, or have it for dinner with some noodles or rice. However you make it, it’s easily customised with fresh veg or a ready-made stir fry pack without the heavy and calorific sauces. Get involved and give this a try.

INGREDIENTS:

  • 600g chicken breast
  • 1 onion
  • 2 chillis
  • 2 cloves garlic
  • 1 broccoli
  • 200g frozen peas
  • 1 tin of sweet corn
  • 1 Nandos smoky bbq rub
  • 5 sprays fry light

METHOD:

  1. Finely chop the onion, chilli & garlic and add to the pan for 2-3 mins
  2. Chop the chicken into chunks and marinade in the Nandos rub before adding to the pan
  3. After 5-10 mins add in the broccoli, peas & sweetcorn. Chop the broccoli quite small so it cooks quicker
  4. Cook through until the chicken is done and then serve!

Try this meal on its own to keep it low carb, or add some rice/noodles to it, you can always add some light soy sauce if you need it or a great low-calorie sauce option in Sriracha.
