CURRIED CHICKEN FRIED RICE

A family meal for four or in my case dinner tonight and lunch for the next few days!

Ingredients:

  • 500g chicken breast
  • 1 onion
  • 2 garlic cloves
  • 1 chilli
  • 320g petis pois
  • 1 red pepper
  • 2 pilau packet rices
  • 1 tsp curry powder
  • 1 tsp paprika

Method:

  • Cut the chicken into chunks and marinate in curry powder and paprika (ideally overnight)
  • Finely chop or blitz the onion, garlic and chilli and heat in a pan for 1-2 minutes
  • Add the curry powder and paprika chicken to the pan
  • Cook on a medium heat for around 10 minutes or until chicken cooked
  • Add frozen peas and the red pepper and cook for a further 5 minutes
  • Add both packets of rice and stir together for 5 minutes
  • SERVE
