SIMPLE ‘LOW CARB’ TUNA

Check out this fantastic speedy and tasty meal for two. Tuna steak is a great lean source of protein while also delivering a hit of micronutrients including vitamins and minerals. You can cook the tuna to your taste if you prefer it on the rarer side. This meal is perfect for a low carb option and the samphire goes perfectly with the tuna. This is a great option if you’ve recently become a pescatarian, want a change from chicken or are simply trying to reduce the amount of meat you consume. Tuna steaks can be really meaty so provide the perfect alternative to meat, without sacrificing on taste.

INGREDIENTS

  • 2 tuna steaks
  • 1 box of samphire (115g)
  • 2 garlic cloves
  • 2 fresh chillis
  • Black pepper
  • Lime to season

METHOD:

Crush the garlic and chop the chilli and place in the pan with a drop of oil for 2-3 minutes

Season the tuna steaks on both sides with black pepper and add to the pan

Slowly cook the steaks on a medium heat for 5-10 mins (depends on the thickness of the steaks, until they are nearly cooked through)

Add the samphire to the pan and continue to cook for another 5 minutes.

Once the tuna is cooked through serve and garnish with a squeeze of lime.
